Tuckerbox Owners Plan to Open New Turkish Bakery in White River Junction
The word is out. We may not know exactly when but we do know what will be moving into the space formerly occupied by Piecemeal Pies in downtown White River Junction. Tuckerbox owners Vural and Jackie Oktay plan to open Cappadocia Cafe, a Turkish bakery, just across from their current restaurant. In their own words:
“ . . . We are installing a custom wood fired oven which will be a huge part of our concept. The overall layout of the space will remain the same with the addition of the wood fired oven. This will be more of a quick service concept with a large part of the business being take-out. We are bringing over two very experienced Specialized Chefs from Turkey in order to provide an authentic Turkish experience.
What will be on the menu? Among other offerings: lahmacun, a thin flatbread pizza with ground lamb, rolled and eaten like a wrap; pide, a long pizza with lamb, toppings, and a cracked egg added before being placed in the oven; borek, a savory pastry of phyllo stuffed with beef, potato, or spinach and cheese; and pogaca, a savory bun often eaten for breakfast on the streets of Istanbul.
The hoped-for but still very tentative opening date would be in early April, but it could also be later in the year. Staffing availability, including processing of visas for the chefs, will determine when the doors of Cappadocia Cafe will open for business.
